Make this amazing super healthy, vegan & delicious Parfait, perfect for breakfast or dessert!
- ½ cup diced mango bite size pieces
- 3-4 strawberries cut in bite size pieces
- 1 kiwi skin removed and cut in bite size pieces
- 1 diced nectarine cut into bite size pieces
- Berries for garnish
- 1.50 cups Coconut Yogurt (or any yogurt of your choice)
- 2 Fig and cranberry Charlie’s plant powered Artisan cookies
- 1.5 tbsp Honey or maple syrup to taste
- 1 tsp vanilla essence
INSTRUCTIONS
- Crush both Fig and cranberry Charlie’s plant powered Artisan cookies in a food processor or roughly with hands
- Take 2 serving glasses or bowls (clear ones are better since it makes it look even more appealing).
- For the bottom layer, add 2 tablespoons of crushed Fig and cranberry Charlie’s plant powered Artisan cookies to both the glasses.
- Add a layer of fruits
- Repeat the cookies, fruits & yogurt to form another layer.
- Top it off with 2 tablespoon of yogurt and granola and last but not least some berries, I used black berries and strawberries
- Drizzle some honey / maple syrup on it before serving (optional).
Can store up to 3-5 days in the refrigerator. Make sure to cling wrap before storing!
